Does anyone here make mead? As part of my ongoing spiritual development, I am trying to eat and drink as locally as possible. I feel an ethical obligation as far as the environment is concerned, but I also think that developing a relationship to the land involves getting one's nourishment from the immediate area as well. I buy the vast majority of my food from local farms and do my own baking.
Honey is plentiful locally. I'd love to get my hands on a simple and reliable "beginner's" recipe. I love metheglin, as well. I'd also like to have something very special for rituals and celebrations.

i have always hated the stuff, feels like tin foil running over my teeth when i drink it. that said, a friend once made some and it was delicious - had some herbs added to it.

i have always hated the stuff, feels like tin foil running over my teeth when i drink it. that's a sign of rushing it, it hasn't been aged enough. If it was a commercial mead, then don't buy it again! If it was homebrew, then the makers didn't leave it long enough (needs a year+ from bottling imo)

Never quite left it that long.

I have a bottle made by a friend. I haven't opened it yet and it's at least three years old. I'm a bit nervous of it, truth to tell.
Once I (finally) get moved, I'll be trying to make some myself.

In my experience any alcoholic drink needs to mature. We're only now cracking open our 2006 sloe gin - silky and richly tart. Mmmm

I had a lovely 2007 plain mead after dinner tonight made with wildflower and orange blossom honey.
Now to find a decent recipe and take the leap!

I've never made it myself but I did at one stage collect a load of recipies. I love mead. There used to be a company up here that made three varieties much lighter than your Lindisfarne or Moniack. One had apple juice involved in it to give a dryer mead, one was a simple variety and the third a spiced one. Sadly they stopped producing so I'm left with Moniack most of the time now.

I have a couple of old winemaking books with mead recipes but usually I go for Moniack or mead from these guys: www.vitiswines.co.uk/vitisshop/ the Monk's Mead is gorgeous, lighter version of the Moniack I find. Found them at the Colchester Oystar Fayre this year I think.
